We had a fantastic day today. Got an early start, and
planned out the day so we wouldn’t miss a beat. We made a custom script for
Grand Champion to get some variety in answers, and then left for the Krog
Street Market. Krog Street Market is unlike any other in Atlanta, it is an old
1920’s warehouse that has been recently restored to resemble a west coast style
market. It has about 10 different stores and restaurants, ranging from BBQ to
Chinese and Mexican food. The folks at Grand Champion Barbeque could not have
been any nicer. Head chef Anthony Galletta was kind enough to let us come to
the back of the kitchen and document all of his equipment. Having one of the
most state of the art smokers and a freezer packed with fresh brisket, ribs,
and chicken. He even took a brisket out and walked us through the dry rubbing,
and how important it is to get the spices all over the red meat. He then took
us out front, and whipped up brisket sandwich, with sauce on the side. One of
the most important things to do when eating bbq he said, was to eat the sauce
on the side. Because sauce on the side lets you really enjoy all of the hard
work that was put into making it taste so good. They smoke the brisket for 14
hours, and the chicken for 9 hours, so much hard work goes into perfecting
their bbq. We documented the making of, and demolishing of the brisket
sandwich. And gave it all five stars on taste, service, and location. Could not
be any better of a restaurant. We did our exit video, along with footage of the
surrounding neighborhood. It was a beautiful conclusion to an exciting day.
